Ingredients
A. Pasta:- 200 gram Kimball Spaghetti Pasta
- Salt & a little oil
- 200 gram chicken breast
- 2 tablespoons oil
- 2 tablespoons kapitan curry paste
- 1 can Kimball Basil & Garlic Pasta Sauce
- 30 ml coconut milk
- 200 ml water (adjust for sauce thickness)
- 1 stalk lemongrass – bruised
- 1 teaspoon tamarind juice
- 1 sprig of fresh basil leaves
- Salt & sugar to taste
- Fresh basil leaves
Method

A. Cooking the Pasta
- Cook the Kimball Spaghetti Pasta until al dente.
- Drain and toss with a little oil to prevent sticking.

B. Kari Kapitan Sauce
- Heat the oil and add the chicken. Sauté briefly until the chicken changes colour.
- Add the kapitan curry paste and lemongrass, then stir until fragrant.
- Add the Kimball Basil & Garlic Pasta Sauce and mix well.
- Pour in the coconut milk and water, then simmer until the sauce becomes thick and creamy. Add tamarind juice, salt and sugar. Adjust seasoning to taste.
- Serve the Kimball Spaghetti Pasta in a bowl and pour the kapitan curry sauce over it. Finish with fresh basil leaves as garnish.
